I mistakenly advised by PMs to use the # of notes column to keep a record of changes made against a person/resource, rather than against a task. I looked to see if I could easily delete the notes assigned to people but couldn't find a way. Does anyone know if there is a way of deleting a note in # of notes?

Did you try expanding the Notes related panel to delete the one you do not want anymore?
